Dinner - March 16, 2008













Tonight's dinner had an Italian theme. As usual, some key ingredients were from Trader Joe's, but not as much as before. The chicken sauce was mostly from a Trader Joe product, but most of the rest were from the neighborhood Giant. This was the first time I used my special aged Balsamic Vinegar from Balducci's, it was very nice for making a dressing as it wasn't harshly sour and had a hint of sweetness. I didn't take a photo of the strawberries but I may do so tomorrow with the remaining strawberries.

I had considered making's an Irish dinner in honor of St. Patrick's Day, but I don't know how to do Corned Beef Brisket and Cabbage.

Tonight's menu:

Baby Spinach Salad with Bacon and Green Beans in Balsamic Vinegar and Mustard Dressing
Pennette Pasta with Fresh Tomatoes and Basil
Chicken Cacciatore with Baby Portabello Mushrooms
Fresh Strawberries and Cream (Not Pictured)

This was Victor's best meal. Normally, I don't like salad but Victor's salads are to die for.
