Dinner - April 13, 2008



I decided to have some Spanish influence on tonight's dinner. It was also going back to good old Trader Joes for the main ingredients. With Hai and Yen as tonight's guests, here is the menu for the dinner: (click on blue link for more photos)

Tonight's menu:

Antipasti salad with Cilantro-Herb Garnish
Broiled Swordfish with Spanish Fish Rub
Spanish Yellow Rice
Pepper Medley with Carrots and Onions
Mixed Berry with Soy Yogurt Parfait

This dinner turned out better in terms of taste than the last two. Maybe because I wasn't trying to follow a specific recipe and used my intuition more. I bought most of the ingredients from Trader Joes. One noted exception was the Spanish Fish Rub Spices that I found at Harris Teeter's. I felt a twinge of guilt in buying Swordfish, since it's not 100% environmentally correct. However, it was produced in Singapore, and I'm pretty confident the Singaporeans followed the Trader Joes catch guidelines and are on the up-and-up.

Hai as expected loved the addition of pancetta and cuts of salami into the salad mix. Swordfish came out very well, Yen enjoyed it especially. This time, it wasn't overcooked and was correctly seasoned. Pepper medley was not bad for a frozen source, though I added fresh carrots and onions to the side dish. The rice was okay, maybe a bit dry, but at least not too overseasoned. For dessert, it was 100% Trader Joes, where I bought the berry mix and put it on top of the soy yogurt in raspberry, strawberry, and peach flavors.
