Wild Smoked Salmon with Garlic Apple Pesto and Frisee Salad
Scallops with Portabello Mushrooms Sauteed in Butter
Trader Joe's Fire Roasted Vegetables

I went for an European theme for tonight's dinner.

The salad was my first time attempting it, as I kinda made up the recipe myself. It was to help give me practice in plating and food presentation. However, it tasted pretty good actually, if a bit too much garlic. It's hard to go wrong with smoked salmon, though. The scallops I've made before from a recipe in Tom Colicchio's book, he likes using butter and thyme a lot. The veggies were the weak link, as they were frozen and the red pepper sauce didn't quite complement the scallop dish. Like last week, most ingredients were from Trader Joe's...

Chu Hai liked the meal. Unfortunately, after dinner, we saw Maryland blow a 20-point lead and lose to Clemson :(
